# What You'll Need:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 teaspoon salt
03 - 1/2 teaspoon ground black pepper
04 - 1 teaspoon Italian seasoning
05 - 2 tablespoons olive oil

→ Sauce

06 - 2 tablespoons unsalted butter
07 - 4 garlic cloves, minced
08 - 1 cup heavy cream
09 - 1/2 cup chicken broth (gluten-free if needed)
10 - 1/2 cup grated Parmesan cheese
11 - 1 teaspoon cornstarch (optional, for thickening)
12 - 1/2 cup sun-dried tomatoes in oil, drained and sliced
13 - 2 cups baby spinach
14 - 1/4 teaspoon crushed red pepper flakes (optional)

# How to Prepare:

01 - Pat chicken breasts dry and season evenly on both sides with salt, ground black pepper, and Italian seasoning.
02 - Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 to 7 minutes per side, until browned and fully cooked. Transfer chicken to a plate and loosely cover with foil.
03 - Reduce skillet heat to medium. Add unsalted butter and minced garlic; sauté for about 1 minute until fragrant.
04 - Add heavy cream, chicken broth, and grated Parmesan cheese to the skillet. Simmer for 2 to 3 minutes, stirring to fully combine. For a thicker sauce, whisk cornstarch with 1 tablespoon cold water and add to the mixture.
05 - Stir in sun-dried tomatoes and baby spinach. Cook for 2 to 3 minutes until spinach is wilted and tomatoes are tender.
06 - Return cooked chicken and any accumulated juices to the skillet. Spoon sauce over the chicken and simmer for 2 to 3 minutes until heated through. Sprinkle with crushed red pepper flakes if desired, and serve hot.
