01 - Line a baking sheet with parchment paper to set up your dipping station.
02 - Insert a skewer or lollipop stick into each marshmallow if using handles for easier dipping.
03 - Combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely melted and smooth.
04 - Dip each marshmallow halfway into the melted chocolate, allowing excess coating to drip off.
05 - Immediately coat the chocolate-dipped portion with sprinkles by sprinkling over the top or dipping into a bowl of sprinkles while chocolate is still wet.
06 - Stand marshmallows upright on the prepared baking sheet. Let chocolate set at room temperature for approximately 15 minutes, or refrigerate for faster setting. Serve immediately or store in an airtight container for up to 3 days.
