02 - Heat over low, stirring occasionally, until garlic softens and turns golden, about 8 to 10 minutes, avoiding browning or burning.
03 - Add rosemary, thyme, or red pepper flakes if desired during the last 2 minutes of heating.
04 - Remove from heat and allow to cool slightly; strain the oil through a fine mesh sieve into a clean, dry jar, discarding or reserving garlic slices.
05 - Refrigerate the infused oil for up to one week.
