03 - Transfer cooked eggs to an ice bath for 2 minutes. Peel the eggs carefully.
04 - Using a microplane or fine box grater, grate the peeled eggs evenly over the prepared toast.
05 - Finish with a sprinkle of salt, pepper, and fresh herbs if desired. Serve immediately.
